The finca is situated at an altitude of 1,880–1,900 metres above sea level. Harvesting takes place between October and January, using only ripe beans, which are selected using the floating method: only those beans that float to the surface are chosen and left to dry in the sun for 20–25 days. German is involved in every stage of his coffee’s production, right through to storage.
